Top Secret….Southern Squash Dressing

Okay….. I could get in BIG trouble for doing this, but I’m going to share my family’s secret recipe for Squash Dressing.  This recipe has been a family tradition at our Thansgiving feasts for quite some time.  Even my brother who absolutely HATES squash loves this dressing.  It is superb and a great way to sneak veggies into something your kids will actually eat. 


6 yellow squash washed, ends trimmed and cut into 1 inch cubes

3-4 c of gluten-free cornbread crumbled (or equivalent of gluten-free bread or biscuits)

2 cans of gluten-free cream of chicken soup

1 c unsalted butter melted

1 large yellow onion chopped

2 tsp dried sage

coarse salt and freshly ground black pepper

6 eggs beaten

Preheat oven to 375F.  Start by cooking your squash in a pot of boiling salted water for 7-10 minutes until fork tender.  Drain squash and then mash it thoroughly.  Mix squash with all other ingredients in a very large bowl and stir to combine.  Pour dressing in a greased 9X12 baking dish and bake for 45 minutes or until golden on top.

Serve with some homemade turkey gravy on top.   Mmmm….turkey!!  I cannot wait for my favorite holiday to get here.
