Beer Braised Chicken

This is absolutely my husband’s favorite chicken recipe.  It doesn’t have a lot of ingredients, but it is packed with yummy flavor.  I had not cooked with fennel (also called anise) before trying this recipe and now I am a HUGE fan. 


5 slices of bacon cut into bite sized pieces

2 chicken breasts, 3 drumsticks, 4 chicken thighs

Kosher salt and freshly ground black pepper

1 large yellow onion thinly sliced

1 fennel bulb, cored and thinly sliced

1 bottle Redbridge or other gluten-free beer

2 T apple cider vinegar

2 T unsalted butter

Preheat oven to 400F.  Cook the bacon in a large dutch oven until crisp.  Remove bacon with slotted spoon and let drain on papertowel.  Dry chicken pieces and season liberally with salt and pepper.  Sear the chicken on all sides in the bacon fat over medium high heat.  Remove the chicken from the pot and add your fennel and onion.  Saute until tender and carmelized about 8-10 minutes.  Pour in your beer and bring to a simmer.  Put chicken back in pot and cover.  Cook pot in the oven for 30-40 minutes turning once halfway through cooking process.  Remove pan from the oven and place chicken on a platter.  Simmer sauce on the stove and add vinegar.  Reduce the sauce for about 5 minutes or until thickened and then add your butter to finish.  Pour your sauce over the chicken and finish with bacon pieces.  You can also garnish with some of your fennel stalk pieces.

 This dish is definitely one to keep in your back pocket!  Try it and tell me what you think!
